
Meringues are super easy but a nice little treat if you want something a little sweet. The last time I made meringues it was these Date Nut Meringues, so I decided to try something a little different this time. I’m not sure how to pronounce the Swedish name for these, but thought it would be fun to try.
There are literally three ingredients in this recipe so when I say it’s super easy I mean it. All you do is whip together the egg whites, add sugar, then fresh ginger. I used a small cookie scoop for these and then let them bake low and slow.
Taste wise these were good if you like a nice punch of ginger. I’m not a huge ginger fan but enjoyed having one or two or these. They’re definitely fun to make and feel fairly healthy (not sure how accurate that is!). I think I’d cut back a little on the ginger if I made these again since they were a little too potent for me, but I enjoyed trying them.
