
I find trying to bake gluten free items to be tough since the consistency can be different. I’m sure it’ll get better with practice, but an easy way to do gluten free is just find items that don’t actually use flour! Plus, this cake is very rich so while it doesn’t look like a lot, it will serve quite a few people (or allow you to have cake several days in a row!).
This cake is super easy to make and the only change I made was to skip the salt since I used salted butter. It’s not going to be as thick as a normal cake would be since you aren’t using flour, but I would highly recommend spraying the pan and then cutting some parchment paper for the 8 inch cake round to ensure it doesn’t stick to the pan.
The icing for this cake is easy to throw together too; though you have to wait until the cake is completely cool before you can put the icing on top. As a test, my husband whipped the icing the second time we made this cake and he said it made it more cake-like rather than just feeling like the ganache was just a glaze. Either way – both tasted delicious. 🙂
