
Honestly, nothing is better than yummy coffee cake with a great cup of coffee on your day off. I’ve got a go-to recipe for coffee cake, but I’m trying to branch out a little so I decided to try a coffee cake muffin recipe.
This recipe was really easy to throw together so it would be great for a fairly quick breakfast if you had a little time. The only thing I didn’t do that this recipe called for was to spread out the crumb topping mixture on parchment paper to dry. I’m sure that would have helped a little, but I felt like the crumb mixture turned out pretty good. Next time I would probably cut the crumb mixture in half; just because I felt like there was a little too much on top for my preference.
While the actual muffin was very good I do wish it had a little more coffee cake flavor. I think I would add more cinnamon next time as well, or potentially create a thinner crumb mixture to swirl in the muffin batter once it’s in the muffin pan to help give a little more cinnamon flavor. That’s totally my preference though and all in all it helped create a good breakfast to serve friends that were in town.
