Fudgy Double Chocolate Cookies

I know I saw this all the time, but cookies aren’t my favorite dessert and yet I make them all the time. They’re just easy (or at least most of them are) and are perfect for sharing. This recipe is very standard and the dough comes together quickly. It does need to chill for an hour, but that’s the only reason I’ve marked this as a 9 in time because that step is crucial.

You’ll make a ganache first by melting chocolate chips and butter together. Set this aside while you mix together your 3/4 cup of sugar, eggs, and vanilla extract. Then you’ll add in the melted chocolate. Sift in the cocoa powder, and then the flour, baking soda and salt. Use a large spoon or spatula to mix the dough together (it will resemble a thick brownie batter).

    After chilling, the dough firms up enough to roll into nice scoopable balls. I did the optional sugar coating and pressed extra mini chocolate chips on top before baking—and I highly recommend not skipping that part. It’s such a small step, but it makes the finished cookies look bakery-level pretty.

    While I still think these Brownie Crinkle Cookies are some of my favorites, this comes in at a close second. Really nice chocolatey flavor and they look really pretty. Very easy, fairly quick, and super delicious!
