Cookie Dough Cupcakes

This was a request as I had someone mention they loved cookie dough and asked if it was possible to do some kind of baked goodie with cookie dough. I did a little research and found this recipe from Boston Girl Bakes.

It’s not just egg you have to be careful of with eating raw cookie dough, it’s flour too. So in order to make the edible cookie dough you have to heat-treat the flour by baking it. That’s super easy and you can do that while getting other things ready. Cream together the butter and sugars then add the vanilla and milk. Once the flour has cooled stir it and the salt into the butter/sugar mixture, add the chocolate chips and stir. When it’s fully mixed you’ll pop this into the fridge.

Next you’ll focus on the cupcakes. It’s pretty standard: mix your dry ingredients with the chocolate chips. Combine the wet ingredients and then gently mix the wet and dry together. Scoop these into prepared muffin pans and pop them in the oven.

You can start the frosting while the cupcakes are baking. Start by creaming butter with brown sugar until it’s light and fluffy, then gradually add powdered sugar. Finish with a splash of cream, vanilla, and a pinch of salt, and whip it all together until it’s silky and light.

I’m not sure if I just didn’t put enough batter into the muffin cups or what, but my cupcakes came out a little short. Looking back it serves 12 and I managed to get more out of it so I must have not put enough batter in there. I also completely missed the part where you’re supposed to core out a little of the cupcake and put some cookie dough in the middle. Honestly the cupcakes were pretty small so this really wouldn’t have been possible anyway, but definitely something I’ll have to try next time (also explains why I had so much cookie dough leftover…). Pipe the frosting onto the cupcakes and then sprinkle some chocolate chips on top. I took the smallest scoop we had and made little cookie dough balls to top the cupcakes. While they weren’t as impressive as they could have been, they looked pretty cute! Taste wise it felt a little off because of my cupcake snafu but when you got a little bite of the cupcake, frosting, and cookie dough it was very good (also very rich!). My husband had some of the cookie dough with ice cream and it was really good too so if you have some leftover that’s a good way to use it up. Or you could just eat it straight. All in all a fun recipe and very good so I’d try these again!
