Lemon Shortbread Squares

Every once in a while I get into a big lemon kick and get in the mood to have something like lemon squares. I made those a few years ago so I decided to try a new recipe this time.

Similar to the other recipe I used the crust is very simple to make and doesn’t take much time. I was a little concerned though because it seemed like there was more flour in some spots. I tried to make sure there were chunks of butter in those areas and just hoped when it baked it would melt together so you didn’t take a bite and end up with a ton of flour. The lemon curd is just as easy as well so no issues there either.

Honestly nothing about this recipe was hard, just a little back and forth on things. For example, you put the mixed dough into the freezer for ten minutes then bake for 15. Then you take the dough out, add the lemon curd, and bake for another 20 minutes. Nothing complicated, but does require getting up and down a little; hence the 9 ranking. I’m not sure that actually warrants dropping from a 10 to a 9 but I didn’t want to suddenly start doing half rankings.

Regardless, this is a super easy recipe all around and tasted great as well!
