Pecan Puffs

I was going to make another fudge to round out my December posts but I’ve been in the mood to make pecan puffs so I decided to do those instead. I think everyone calls these cookies by different names, but we grew up calling them Pecan Puffs and they’re another classic in our house. I have no idea where this recipe came from but I’m including the recipe we’ve always used below. It’s easy, fairly quick, and very delicious. My only recommendation would be to really squeeze together the pecan balls so they don’t fall apart.

Ingredients

1 stick butter (melted)

2 Tablespoons sugar

1 teaspoon vanilla

1 cup flour

1 cup chopped pecans

Instructions

Mix all of the ingredients together and then using your hands roll a pecan size amount of the mixture in your hands. Line a cookie sheet with parchment paper and place the cookies on it. Bake at 300 for 18-25 minutes or until lightly golden brown. Roll the cookies in powdered sugar as soon as they come out of the oven and then once again when cooled.
