
Happy New Year’s Day! There’s a whole meal’s worth of foods you should eat on New Year’s Day for good luck and one of those is cornbread. I made a delicious skillet cornbread a couple of years ago so this time I decided to spice things up a little and make a jalapeno cheddar cornbread!
This is a very simple recipe and is easily thrown together within 30 minutes of dinner. Honestly you just throw everything together in a bowl and mix together; cutting and seeding the peppers is what takes the longest. I diced one pepper for the actual mixture and then used a second pepper for the top garnish.
These were good, but I wished they had a little more cheese and our peppers weren’t very potent so it was a bit lacking in flavor. I’d make these again and probably add a bit more cheese and hope my next batch of jalapenos were a little spicier!
