Simple Microwave Fudge

Here’s another super easy fudge recipe! I’m actually not sure where I found this recipe as we first started using it more than a decade ago. This is a classic around our house since it is so quick and easy; plus it tastes really good! I didn’t spend as much time as I should have smoothing out the lumps so this particular batch isn’t quite as pretty but it still tasted delicious!

Ingredients

1/2 cup butter

3 2/3 cups powdered sugar

1/2 cup pure unsweetened cocoa

1/4 cup heavy cream

1 teaspoon vanilla extract

Process

Grease a 8×8 pan and set it aside (or line with parchment paper). Combine all of the ingredients except the vanilla in a microwave safe bowl. Heat the mixture in the microwave on high power until the butter melts (about 2 1/2 – 3 minutes). Stop and stir the mixture once during this process. Remove the mixture from the microwave and using a rubber spatula, stir in the vanilla. Continue mixing to smooth out any lumps and then pour into the greased pan. Allow the fudge to cool at least an hour and then cut into squares.
