
While I am more a waffle person than pancakes; there’s nothing better than a nice fluffy stack of pancakes on a Saturday morning to get your day started. We had plenty of buttermilk in the fridge so I decided to try a new recipe and since King Arthur has been stellar with all of their recipes these days I’m using their Buttermilk Pancake recipe.
As an aside, I happened to see last week that King Arthur has a new cookbook coming out on March 2, 2021. I’ve been using recipes on their website but given the success I’ve had I pre-ordered a copy and now have something to look forward to in coming weeks!
Back to this recipe though…. it’s really quite easy. I’ve made a lot of different pancake recipes in my time but this was the first time I had to let the batter rest before using. While this recipe takes a little longer than standard pancake recipes it’s still very simple and fairly quick. I love that King Arthur has a whole blog dedicated to each recipe midway through their online recipe (Perfect Your Technique). Plus, there’s a lot of baking tips at the bottom in case you need to swap ingredients out.
The pancakes taste really good and the buttermilk adds a nice tanginess that makes the flavor a little more complex. Mine didn’t turn out quite as pretty as theirs did, but they tasted great so that’s really all that matters!
