Apple Streusel Muffins

I love muffins but usually end up making the same ones over and over again. If you’ve read the blog for a while you know that fall baking is my favorite so I was excited to try these Apple Streusal Muffins.

You start with the streusel by melting some butter and mix it with flour, brown sugar, oats, cinnamon, and a pinch of salt. Stir it all together with a fork until it forms little crumbles, and set it aside.

For the muffin base, whisk together your dry ingredients in one bowl. Then, in a larger bowl, whisk the wet ingredients until it’s fully mixed. Gently fold the dry ingredients into the wet just until combined, then fold in the diced apples; trying not to overmix. Scoop these into your muffin tin and then generously add the streusel on top and bake. Be sure to note the two different baking temperatures and times.

These were really good, super easy, and a nice deviation from my normal muffin routine. Highly recommend!
