Maple Pecan Oatmeal Cookies

Oatmeal cookies are one of my go-to bakes; though my husband and I disagree on whether there should be raisins or chocolate chips (I’m pro raisin). I saw this maple pecan oatmeal version and figured it would be a fun twist on a classic.

The dough comes together really easily; you just cream the butter and sugars until it’s light and fluffy, then mix in the egg and a splash of maple extract. After that, you add in the dry ingredients: salt, baking soda, cinnamon, nutmeg, then the flour and oats. Stir in the chopped pecans at the end and you’re good to go. Using a big cookie scoop you’ll scoop these onto a baking sheet and bake for about 10 minutes.

They turned out soft and chewy, exactly what you’d expect of an oatmeal cookie. Flavor-wise, they were good, but I as I mentioned last year I think I like the idea of maple in certain things more than I actually like it. My colleagues really enjoyed them though so that’s just my opinion!

While not my personal favorite, these are super easy and a fun change from just a traditional oatmeal cookie so worth trying!
