
I’m a sucker for any kind of danish so when I saw this one I was excited to try it.
The dough itself is pretty simple to make, you bloom the yeast in warm milk, mix that with egg yolks, and stir it into a bowl of flour, sugar, salt, and cold butter that you’ve cut in until it’s pebbly. It’s supposed to be a sticky dough so be mindful of that but once it’s ready then pop it into the fridge.
After it’s chilled, you roll it out, do a few folds (kind of like you’d do for croissants if you’ve ever made those) and chill it again. Because the dough is so sticky this was a little difficult but I made it work.
For the filling, I just used whipped cream cheese because that’s what we had. You beat that with a bit of sugar and an egg until smooth. Then comes the assembly: divide the dough in half, roll each into a rectangle, and score the dough into thirds so you know where to spread the filling and where to cut the strips. You slice the sides into angled 1-inch pieces, cut off the little top and bottom squares, and leave yourself flaps to fold over.
Once the filling’s in the center you’ll add the mixed berries and then crisscross the strips over each other to make a braid. The dough was super sticky, which I didn’t really think through until I got to the part where I had to slice and braid it and then I realized pulling up delicate strips of soft dough was going to be kind of a nightmare. I had rolled everything out on parchment (which helped a little), but cutting and lifting each piece was definitely messy. I finally got it wrapped and popped it into the oven but it wasn’t pretty.
I did forget to do the icing drizzle at the end, which maybe would’ve bumped up the flavor a little. It was fine, had a nice berry taste, but overall it wasn’t my favorite. It wasn’t sure pretty but it did look better than the Cherry Danish I made a few years ago.
