Ok, I’m using store bought puff pastry again…. hopefully you’re not too disappointed. After last year’s 12 Days of Christmas Baking I knew I’d need a few recipes that were fairly easy to give me time to focus on the more difficult ones. Plus, this looked too delicious to not try! Also, let’s be real; not everyone has time to make their own puff pastry so hopefully most of these are recipes you’d try yourself at home.
What’s not to love about danishes? Personally, my favorite are cherry so I had high hopes for this recipe. This is another easy recipe to throw together so it would make a great quick breakfast item. The only thing I did differently was I couldn’t find the cherries the recipe called for so I improvised and used a can of cherry pie filling and rinsed off all of the pie filling parts so I only had the cherries. They definitely weren’t as bright as the ones in the photo on the recipe.
I probably should have made the middle portion a little thinner so I had enough dough to stretch across the pastry. It was enough when I popped it in the oven, but as it cooked they pulled apart a little so the final product didn’t look as pretty. We waited to put icing on until ready to eat since we didn’t eat right away.
I ate my piece the next morning and it tasted good, but I imagine it would have been better still warm out of the oven. It was a little sweeter than I would like and while good, I don’t think this would be my go to for cherry pastries. I would probably try this again and back down on the sugar a little and then try and find the cherries this recipe calls for as well since it could have affected the taste. Even if it wasn’t my favorite cherry pastry it was good and very easy.
