Herb & Cheddar Scones

Happy National Scone Day! Here’s another savory scone for you to try and if you’ll notice I’m back to cheddar. 🙂

I’m going to start by saying that I shifted gears at the last minute as to which recipe to use, so I did not have chives or fresh thyme. I’ll go ahead and note that these were really good, so I’m sure if I’d had both rather than just dried thyme they would have been a ton better! Easy recipe, honestly the hardest part was grating the butter. I buy butter from Costco, so I keep some in the freezer until I need it and I grabbed one from there rather than just putting a stick from the fridge in the freezer for 15 minutes or so. I would absolutely recommend the latter as I took forever to grate enough butter and I nearly simultaneously froze and grated my hand. Despite this, the dough came together nicely and was easy to cut.

As mentioned before, these were really good despite using dried thyme. I can’t even imagine how good they would have been with fresh thyme and the chives and I’ll definitely make these again so stay tuned for an update. While I love the Bacon Cheddar Chive Scones I reference fairly often these were really nice too so they’ll go into my normal rotation.
