Bacon-Cheddar-Chive Scones

I love cheddar biscuits so when I saw this recipe for Bacon-Cheddar-Chive Scones in King Arthur’s Baking Companion I knew I needed to try it.

Generally speaking, scones are pretty easy to throw together. The hardest part of this recipe is just all of the prep that needs to happen: cook and chop the bacon, chop the chives/scallions, grate the cheese. I try to cook my bacon so it’s extra crispy to make it easier to cut, plus it’d rather it be crunchy than chewy in the scone. Once you’ve got all of that prep work done then everything else is a cinch.

The recipe says to add 3/4 cup of the heavy cream and then more so it holds together. I probably ended up adding another 3 tablespoons but yours might vary so just keep an eye on it and make sure it’s not too crumbly. Then just shape the scone and move to a baking sheet with parchment paper. Once it’s there cut into 8 little triangles and bake.

The house already smelled good from cooking the bacon but I could definitely smell the chives as they cooked too and it was a great aroma wafting through the house. Taste wise – these were amazing. I had one right out of the oven and it was so delicious. The flavors are so well balanced and you taste the perfect amount of bacon, cheddar, and chives in each scone. Hands down, this will be in my regular rotation of breakfast bakes!
