Homemade Blueberry Scones

I’ve made blueberry scones before and while I liked the recipe I tried then, I wanted to try another one.

I know I’ve said this before, but scones are SUPER easy. I’ve found they’re a little finicky, only because I feel like the dough is dry and hard to shape, but then when I add a little extra liquid it ends up being too much (foreshadowing).

This recipe is no exception and I liked that it didn’t require any freezing time. It is as simple as throwing everything together, being careful not to over mix, and then shaping it onto a pan lined with parchment paper. Once again, my dough looked too dry so I threw an extra splash of buttermilk in and it ended up being a little too much. Thankfully it didn’t seem to create an issues, other than my triangles weren’t as pretty when I cut them because the dough was wetter.

I baked these for 20 minutes and then upon looking at them decided they needed another few minutes. Everyone’s oven is different so just keep an eye on them until they’re golden brown.

These were very good, especially considering how easy and quick this recipe is. Very blueberry forward and I liked the sugar on top. I was going to make the glaze for this, but honestly ate a tiny bite while putting them up and decided they didn’t even need them; though I’m sure it would only make them better. 10/10 for sure!
