
I don’t necessarily love cookies unless they’re right out of the oven, but I do like sugar cookies. This recipe looked fun and a slight variation on a regular sugar cookie.
The recipe is easy and pretty standard as far as cookie recipes go. Cream the butter and sugar; then combine the wet ingredients, then the dry ingredients. Then you add them all together; though be careful not to over mix. You do need to let these sit in the fridge for at least 2 hours so that’s why the time spent ranking is a little higher. I let mine sit for at least 2 1/2 hours and then set them out for 30 minutes (as recommended) before scooping. Even though I let them sit out for 30 minutes it was still a little hard to scoop them so you might consider a little longer. Roll them into balls and then toss in the granulated/brown sugar mixture and bake!
These taste so good right out of the oven! Visually they looked really good and the flavor was slightly more complex than a regular sugar cookie, which was nice. They were a big hit with my family and didn’t last around the house very long! I’d definitely make these again and think they’d be really good around the holidays paired with these yummy molasses cookies.
