Cookie Butter Cookies

I saw these cookies on Instagram and thought they’d be fun to try out since I’ve never bought Cookie Butter before. While I like Biscoff cookies they’re not normally ones I keep on hand and I usually don’t eat them unless I’m on a flight. I like the nutty flavor though and they feel a bit like fall so I’m hopeful making these ushers in cooler weather.

This is a really simple recipe so I’m not going to bore you with walking through this. I followed the directions and measured everything out using a kitchen scale (as it’s more accurate) so it’s all by the book. While I do have vanilla paste in the pantry I forgot about it and used extract. I mixed everything together and then portioned these out using our big cookie scoop. As a note, I love this cookie scoop. It makes nice giant cookies which is fun!

When I pulled these out of the oven they didn’t look done, but I went ahead and pulled them out anyway. After cooling on the pan for 5 minutes they looked better and they were fully baked when we finally tried one. These were really good and as suspected, very fall-ish. It made the kitchen smell great and they were a nice treat!
