
A co-worker recently mentioned they always make Hello Dolly Cookies during Christmas using a recipe from their mom. I had never heard of those before and figured I’d give it a try since they look pretty delicious. I’m not a huge fan of coconut, but in moderation it’s okay; especially if there’s lot’s of chocolate involved.
As an aside, this baked good is also sometimes called 7 Layer Bars or Magic Bars; however after looking at multiple recipes I never found one that actually had 7 layers. Most had 7 ingredients but no 7 actual layers…. just a fun fact. While this particular recipe is labeled as “cookies” I’m actually categorizing this in bars since that’s really the best description.
This recipe is super easy so if you’re looking for something to whip up quickly this is it. It might have taken 5 minutes to throw everything together, if that! I am not a fan of butterscotch but wanted to add something besides just the chocolate chips so I threw in some white chocolate chips to add a little color variation and taste. Everything else I did was just like the recipe recommended.
The recipe made sure to note that the coconut can burn so I tried to keep an eye on it towards the end of the baking. It never burned but I did find the edges got a little crispy so it’s possible I could have taken them out of the oven just a little sooner. As directed, I ran a knife around the edge about 5 minutes after it cooled and I’m very glad I did since it made it a lot easier to cut later once it was fully cool. They tasted really good, though it’s super rich! Even though I don’t love butterscotch I do think I’d try this again using it just to see how it changes the flavor as I suspect it would really add some nice nuttiness.
