When I worked at a coffee shop we used to get wonderful biscotti from a local vendor. My favorite was a chocolate biscotti dipped in white chocolate with some crushed peppermint. I’ve been in the mood for some good biscotti and the store bought stuff just doesn’t cut it so I decided to start off with something simple and then try a few fancier versions later.
While I wouldn’t normally test out a new baked good as gluten free, this recipe is from King Arthur and I’ve had good luck with them so I decided to try my luck. Thankfully this recipe was honestly really simple. It feels a lot like a cookie recipe, but it is a little weird trying to shape the dough into two chunks. I didn’t have course sugar but did have sugar in the raw so I used it instead.
I should have let it sit just a minute or two longer once it came out of the oven; I kind of forgot you needed to let it sit for 5 minutes before cutting into the biscotti pieces. It turned out okay despite this and I turned them over and let them bake for the second round.
The final product looked and smelled really good. It was probably noticeable that it was gluten free to those who don’t have stuff like that very often, but honestly most people probably wouldn’t notice. It tasted a bit like shortbread and was perfect with a cup of tea!
