
I had some leftover cherries I wanted to use up so I searched the internet looking for something I could make and found this recipe. It looked very easy and also looked like something I could half since I didn’t quite have enough cherries for some of the other recipes I saw.
The batter itself is pretty straightforward. You sift the dry ingredients into a bowl and set it aside. In another bowl, beat the butter, sugar, and eggs together until the mixture gets really light and fluffy. Next you’ll add the vanilla and Greek yogurt and mix again until it’s pale and creamy. Fold the dry ingredients into the wet and mix until just combined so the cake stays soft and tender.
Pour half the batter into a prepared pan, add a layer of sliced cherries, then top with the rest of the batter and finish with more cherries on top. Then you’ll pop this into the oven and bake for about 45 minutes. I started checking on mine around 35 minutes since I did a half recipe and was using a 6 inch cake pan. It was still the same thickness so it ended up being done around 50 minutes since the middle still looked a little light around 40 minutes.
This was a really nice cake and I paired mine with some vanilla ice cream. It had a nice cherry flavor and the cake wasn’t too sweet which was nice. I’d make this again for sure but I was glad I did a half batch so I didn’t have a ton of cake lying around the house.
