
I ran across this recipe because I was looking for something gluten-free and that used hazelnut flour since I had some in the pantry I needed to use.
You whisk together an egg and some brown sugar until it gets light and fluffy; then you stir in the hazelnut flour, some finely grated chocolate, and a little salt. That’s it! The batter comes together in minutes. Scoop them out onto a baking sheet and bake for 10 minutes.
I flattened mine just so they looked a little more cookie like while they were still warm, though in hindsight I feel like that made them look a little sad. They didn’t really puff up or spread much and weren’t as pretty as the recipe photo; hence my ranking on visual.
Taste-wise, they were pretty really good. It’s got kind of a chewy texture because of the hazelnut flour and the chocolate was nice. It felt very simple in a good way and like a health bar (if that makes sense). Probably not something I’d make often, but they were good and fun to try!
