Cinnamon Roll Sugar Cookies

I can’t remember how I ran across this recipe, but they looked different and fun so I thought I’d give them a try.

The process starts by pulsing the sugar in a food processor to get it super fine, which helps make the cookies soft. Then you mix in butter, egg, vanilla, and the dry ingredients briefly to form the dough. After rolling it out into a thin rectangle, you brush melted butter all over and sprinkle a cinnamon-sugar mix evenly on top.

Rolling the dough tightly into a log is key, and if it feels too soft, chilling it for 20-30 minutes makes slicing easier. I did have a bit of trouble cutting them, despite chilling they didn’t hold their shape as well as I’d hoped while cutting so they were a little smooshed.

I baked these for about 10 minutes and then once they were cool, I drizzled a simple powdered sugar glaze over them. Overall, despite my worries with shaping, these were super tasty and very much reminded me of a cinnamon roll. Definitely a winner!
