
Snickerdoodles always make me think of the holidays because that’s when we made them and somehow I’ve never made them on this blog.
Honestly this recipe is super easy and I love that it doesn’t require any chilling time. You’ll start by mixing the cinnamon-sugar topping in a bowl. Set it aside and then in another bowl whisk together all of the dry ingredients. Cream the butter and sugar in another bowl until it’s fluffy; then add in whole egg, egg yolk, and vanilla. Slowly mix this into the dry ingredients. Once it’s thoroughly mixed use a cookie scoop to create little balls and then roll those in the cinnamon sugar mixture before putting on a cookie sheet to bake.
Mine were quite as thick as those in the recipe, but they were still absolutely delicious. They were especially good while still warm and with a nice cup of tea! Great recipe, super easy, and they taste great!
