Tarheel Pie

My husband discovered this recipe and it reminds me a little of a Kentucky Derby Pie. That’s one of my favorite pies and since this one is all chocolate I had a feeling I’d love it. This is a simple recipe and I used a pre-made pie crust so that made it a lot easier.

First you’ll want to toast your pecans. I’ll be honest, I wasn’t keeping an eye on the time when I popped them in the oven while my pie crust was baking but I imagine it was about ten minutes. As a note, if you’re using a pre-made pie crust then follow the instructions on the package.

Once those have cooled then you can continue working on the filling. You’ll melt the butter and chocolate chips in the microwave; then whisk in the oil and cocoa. In a separate bowl you’ll want to mix together the sugar, eggs, vanilla extract, and salt. Add this to the chocolate mixture, then add the flour, the remaining chocolate chips, and toasted pecans. Put this into the pie crust and bake for about 35 minutes. You’ll want to let this cool for about an hour before digging in.

This pie is fabulous and now one of my new favorites. I love how easy it is as well. While the recipe doesn’t call for bourbon I have wondered if you could add a splash in to give a little extra flavor. I might try that the next time and see what happens. Regardless, you should give this recipe a try!
