
This is another bake I almost made the last time I did the Baking Through the Alphabet series and thankfully I had it saved. I had actually heard about this cake first in the Bringing Up Bebe book as it’s mentioned as something french mothers teach their kids to make early. I love that idea and while baking with kids can be messy it’s also a lot of fun.
The appeal of this cake is that it’s super easy and usually only has a few ingredients. The recipe I ended up using is probably a little more ingredient heavy than a traditional french one. When I first when I make this I realized after opening the small thing of yogurt that I purchased that it was blueberry. It didn’t mention (or show) a flavor on the top (which is what I was looking at) so that’s my excuse. Anyway, all that to say I had to go back to the store and get more yogurt since I didn’t want to mess the recipe up by using the wrong thing.
The batter comes together in one bowl, which is always a plus. You crack a couple of eggs into the bowl, added the sugar, and whisk. Then you add the yogurt, olive oil, and a splash of vanilla. Add your dry ingredients and stir until combined. I had a little helper who enjoyed stirring so that was fun. Then you just pour your batter into a prepared loaf pan and bake.
I tested mine at 45 minutes and it still seemed like it needed a little time so I let it go for another 5 minutes before pulling it out of the oven. Mine ended up being a little flatter than the recipe picture so not sure what caused that to happen.
Once it was cool I dusted it with a little powdered sugar and topped mine with a few fresh strawberries. It had a very yogurt forward flavor and wasn’t super sweet which was nice. It reminded me a lot of a pound cake which is fitting since the recipe noted this is kind of like the french version of a pound cake. Very simple and delicious and I’d certainly make this again.
