
I always thought I was a brownie person over blondies, but years ago I did this baking series at my job where I pitted two similar classics against once another. Of course brownies versus blondies was on the list and I was surprised that I ended up like the blondies better.
While these are a fancier blondie version they looked fun (and a great fall dessert). To make the base you’ll melt the white chocolate and butter together over low heat. I actually did this in the microwave, but you have to be especially careful with white chocolate becuase it does melt differently than milk or dark chocolates. Set this aside and then using your mixer, beat together the sugar, eggs, and vanilla until smooth. Once that’s ready, pour in the cooled chocolate mixture and mix until everything is combined. Finally you’ll add the flour and salt and mix on low until everything just comes together trying not to over mix. Spread the batter evenly in a prepared pan and top with white chocolate chunks or chips.
Next you’ll focus on the pumpkin layer. Beat butter and sugar together until fluffy and then add in the eggs and vanilla. When that’s mixed together you can add the pumpkin and then all of your dry ingredients. Make sure it’s all mixed before you pour the pumpkin mixture over the blondie base. Pop this in the oven for about 30 minutes and then let it cool for at least an hour. I was a little worried it wasn’t done so I ended up letting mine go slightly longer, but I think I should have just pulled it out of the oven around 30 minutes or so because the pumpkin portion was a little tougher than I felt like it should have been.
I topped mine with some extra melted white chocolate and while it wasn’t the most beautiful drizzle job they still looked fun. These were good, but as I mentioned I felt like my pumpkin layer was a little tough so I probably should have pulled it out of the oven sooner. Regardless, it was good and would be a nice fall treat (I can’t seem to associate pumpkin bakes with anything other than fall!).
