The Best Chocolate Sheet Cake

I love cake and while a layer cake is my personal favorite a nice sheet cake is a close second.

Start by melting together chocolate, butter, and oil in the microwave, stirring every 30 seconds until smooth. You always want to be careful when melting chocolate to ensure it doesn’t get too hot and seize. Then, whisk together cocoa powder, sugars, flour, baking soda, and salt in a separate bowl. In a separate bowl, beat together the eggs, egg yolk, sour cream, milk, and vanilla until smooth, and add the melted chocolate mixture, stirring to combine. Slowly mix in the dry ingredients until just combined, then carefully add hot coffee or water and gently stir until smooth. This is very similar to the base for the Black Forest Cupcakes I made years ago and I’ve found that the hot coffee or water really make the cake texture perfect.

Pour the batter into a pan and bake afor 38-45 minutes. I always air on the lower end of the time when it comes to chocolate cakes just because they can start to burn easily and it’s hard to tell since they’re so dark.

This is a standard frosting recipe and you’ll beat the butter on medium speed until smooth. Add the confectioners’ sugar and once it’s combined you can add the salt, cream, and vanilla. Finally you’ll stir in the melted chocolate and beat until it’s nice and smooth. Once the cake is cooled you can frost it. We didn’t have any chocolate sprinkles so I just left those off. but they are fun looking!

This cake is indulgent and full of rich chocolate flavor. It’s the perfect dessert to pair with a cup of coffee or a nice glass of milk. 10 out of 10 for all categories and a great quick and easy recipe for a crowd.
