
I like Nutella, but hadn’t tried it in dessert before so this felt like a good place to start. Plus it’s a pretty impressive looking cake so good if you need a fancy dessert for a crowd.
The cake is pretty standard, you just mix your dry ingredients together, cream the butter and sugar, and then you’ll mix in the Nutella and add the eggs one at a time. Pour these into 3 cake pans and then you’ll bake it for about 25-30 minutes. It can be easy to let a chocolate cake over bake since it’s a darker color so start at the lower end of the time and be sure to check with a toothpick.
While the cake was easy, the frosting is a little more complex. This is basically a Swiss Meringue and I’ve made this once or twice before and I feel like it’s a lot of work (and calories) for something that in my opinion isn’t the best. I digress….
For the frosting you’ll add the egg whites, sugar, and salt into a bowl over a saucepan with an inch of water. Whisk gently until the temperature reaches 150°F. Be sure not to heat this too quickly otherwise the sugar won’t fully dissolve. Once it’s heated to 150°F then you’ll pour this into the bowl of a stand mixer and using the whisk attachment mix until it’s cooled slightly. Swap out the mixer attachment and using the paddle mixture begin mixing in 1 tablespoon at a time, waiting until it’s fully incorporated before adding the next. This is going to take time and it’ll look like it’s messed up but keep going. Once you’re finally starting to see it come together then add the Nutella.
You’ll add the Nutella frosting between the first two layers and then use the rest to cover the top and sides. You can top with grated chocolate and put some of the sides as well, though I feel like anytime I’ve tried to do the sides it ends up making more of a mess than I expected.
This turned out looking quite nice, though my frosting and grated chocolate could have been neater. This cake tasted good, though it was super rich. While I love Nutella it wasn’t my favorite, especially since it was a little more time consuming. I think it would be nice for a crowd though so worth trying at least once.
