
I’ve only had a few complete fails over the years and this was definitely one of them. This looked like a fun recipe and besides taking a full 24 hours to set up, it also looked pretty easy.
You start off by making the cookies and that’s pretty simple. Mix together all of your dry ingredients and then start beating the butter in a stand mixer. Add the sugar and let that mix before adding the egg and vanilla. Let that mix and then you’ll add the dry ingredients and mix until it’s just combined. Flatten the dough into a disc and put in plastic wrap and let it sit in the fridge at least 1-2 hours.
When it came time to roll these out I noticed my dough was probably a little more crumbly than desired. Not much you can do at this point but letting the dough sit for a little longer made it crack less when I rolled it out. As you can see from my picture, the cookies were probably a little larger than it notes and were also not uniform. I didn’t imagine that you’d be looking at the bottom and see the cookies so I assumed it wouldn’t matter. They cooked nicely; though I didn’t get near as many as they mentioned since my cookies were bigger. I tasted one after it cooled and it was really good and kind of tasted like a homemade Oreo.
Next you’ll make the cream and this is super simple. Add your ingredients into the bowl of a stand mixer and then using the whipping attachment mix until it starts to resemble whipped topping. You don’t want to over beat, but you do want to make sure you’ve got stiff peaks.
Place some plastic wrap in a loaf pan so you can easily take the cake out easily the next day. Then you’ll put a little whipped topping in the bottom and this is one area where I think I went wrong. I got a little happy with the cream mixture and think I put 3x the amount in there as it says. You should only put about a 1/2 cup and then add the cookies. From there you’ll keep layer with that same amount of cream. Cover it once you reach the top and then let it sit in the fridge for at least 24 hours.
As you can clearly see in both photos (I didn’t even try to make the individual serving photo pretty since this didn’t work out) I couldn’t flip mine out. I think there was WAY TOO MUCH cream in my first couple of layers and when combined with the fact that it sat in the car for 45 minutes as we drove to my parents that just made it a mess. While it looked awful (I don’t think I’ve ever given anything a 1 rating for visual!) it did taste pretty good. I loved the taste of the cookies and the cream had a really nice coffee flavor that was fun. I do think I’d make this again in the future if only to see how fun it looks when you don’t mess it up!
