Sprinkles make just about anything fun! If you’re looking for a festive cake then look so further, plus it’s super easy so win-win.
Be sure to set the ingredients that are marked as room temperature out before you start. You’ll mix together all the dry ingredients first, then cream the butter and cream cheese in a stand mixer. Once it’s nice and creamy then you’ll gradually add in your sugar and then add in the vanilla. Add the eggs in one at a time and then once that’s mixed you’ll add the milk and oil. Add in the flour mixture making sure not to over mix and then gently add in the sprinkles.
Grease a bundt pan really really well and then scoop the cake batter into the pan and bake for 55-60 minutes. Be sure it’s actually done in the middle before taking it out. Let it cool for 10 minutes and then flip it out. I took a knife and gently use it to pull away the edges so they didn’t stick. I think I had one small section that stuck but it was easily covered by the icing.
For the icing you’ll beat the butter and cream cheese and then add in the powdered sugar. Save the salt and vanilla towards the end once it’s mixed up and then add the milk as needed. Put that into a piping bag and then pipe onto the cake and add more sprinkles!
Not only was this cake easy, but it was very festive and fun looking. While I’m a sucker for layer cakes (love that icing in the middle) this was really good.
