
I had so much fun doing my Baking Through the Alphabet series back in 2022 that I decided to do it again! I love an apple fritter so I thought this Apple Fritter Cake was a great way to kick things off!
Honestly, I think the peeling and dicing of apples took the longest amount of time so other than that, it’s a pretty easy recipe. You’ll start off by prepping the apple portion and I didn’t have ClearJel so I just used flour. Once you’ve got this ready then you’ll focus on the cake. You’ll mix all of the dry ingredients together and then add the butter. Then you’ll add in the eggs one at a time and then finally the vanilla and milk.
When the batter is done you’ll pour half of it into a loaf pan, add half of the apple mixture, then add another layer of cake batter and top with the rest of the apples. You’ll bake this for 65-75 minutes and I think mine was ready right around 70 minutes. Once the cake is cooled then you’ll make the glaze and pour over the top. My glaze was pretty thick so I just piped mine onto the cake so it doesn’t look nearly as pretty; however, it still tasted good!
I really liked how this tasted. Because apple fritters are generally fried I’m not sure I would have immediately though “apple fritter” if someone had given me this, but it was very good and I’d make it again!
