
Happy (Early) Thanksgiving! What better way to celebrate than with these Butter Pecan Cookies!
There are a few steps here that aren’t in a standard cookie recipe but it’s worth it. First you’ll butter the pecans and that’s pretty easy (also makes the house smell amazing!). Next you’ll mix together all of the dry ingredients for the cookie dough. Set this aside and then brown you butter. That part isn’t hard just be sure you don’t overcook it as it will burn.
Once the butter is browned you’ll add the sugar, whisking well; then you’ll add the eggs and vanilla. Fold in the dry ingredients and then add in the buttered pecans. You’ll let this chill in the fridge for at least 4 hours.
When you’re ready to make these you’ll portion them out and then add a pecan on top before baking. These smelled amazing as they came out of the oven and it said to sprinkle the cookies with granulated sugar but I forgot about that part. I couldn’t resist trying one of these while they were still warm and they were amazing; it was like eating pecan pie in cookie form! These are very similar to the Brown Butter Bourbon Pecan Chocolate Chunk Cookies I made a few weeks ago, but honestly I think I liked these better as they were simple and perfect! While they do need to chill for a bit they’re still easy and fairly quick to make.
