
This recipe reminded me of a Kentucky Derby Pie (one of my favorites!) so I knew I wanted to try it.
This recipe is a little time consuming to keep that in mind. First you’ll want to brown the pecans. We only have whole pecans so we had to chop those and then brown them. A little time consuming but the bonus was the house smelled delicious! Once those were done I cleaned the skillet and browned the butter.
Next you’ll focus on the cookie dough and pretty standard in terms of cookie recipes. You’ll mix the melted brown butter and sugars, then after mixing you’ll add the bourbon and vanilla. Add the eggs and then gently fold in your dry ingredients (which you’ll have already mixed together) and the pecans and chocolate chunks. You’ll pop this in the fridge and let it chill for 4 hours.
After chilling (and pre-heating the oven) you’ll portion the dough out and then press a whole pecan on top. The instructions said to bake the cookies for 12 minutes but ours needed nearly 17 minutes so I’m not sure if our oven is off or maybe my scoop is a little bigger? You’re supposed to add some chocolate chunks on top while the cookies are still warm, but I got sidetracked and forgot.
These were very good and did remind me of Kentucky Derby Pie, but I didn’t really notice the bourbon. They were quite good though and a fun change to a traditional chocolate chip cookie!
