Flourless Chocolate Brownie Cookie

It’s been a while since I made something gluten-free, so I found these flourless brownie cookies and thought I’d give them a shot. Gluten-free baking has gotten easier, but it’s always nice (in my opinion) when you can find naturally gluten-free recipes.

This recipe is super simple and you basically just throw together all of the dry ingredients, then add the egg whites. I ended up having to use 3 egg whites, but I was also using the egg whites that come in a carton so that could be the reason. Throw in your chocolate chips and then refrigerate for an hour.

Once it’s chilled you’ll scoop it out onto a lined cookie tray and bake. I did add the flaky salt because I like the way it tastes. Bake these for a total of 14 minutes (rotating halfway through) and then let them cool on the baking sheets for an hour.

Taste wise these were pretty good. A friend said she thought they tasted kind of like chocolate meringues and that’s pretty accurate. Mine weren’t super pretty, but that’s on me. Very easy and they tasted good so definitely a good option for a quick gluten-free dessert.
