Peanut Butter Banana Icebox Pie

I am not normally a peanut butter dessert fan, but I’ve been trying to find banana recipes so this one fit the bill.

The crust is easy to make as it’s just crushed graham crackers, crushed honey roasted peanuts, and melted butter. I like the just crush my graham crackers in the sleeve so it’s not as messy, but that can be harder when you need to use a certain amount of graham crackers. Bake this in the oven for about 10 minutes and let it cool.

Next up is the chocolate layer and that just consists of melting the chocolate and whipped cream on half power for a minute or two. It’s really important that you don’t heat it up too much or the chocolate will seize. Then you’ll spread that over the crust and add sliced bananas over it.

Once that’s done you’ll mix together the cream cheese, peanut butter, and brown sugar. Let that mix for a bit and then add the whipping cream until it’s nice and smooth, folding in some of the whipping cream so it keeps it’s shape. Pour that on top of the chocolate/bananas and then let it chill 8 hours or overnight. Top however you like, I added some whipped cream, crushed honey roasted peanuts, and drizzled chocolate.

It looked really nice when it was all done, even though my crust fell apart a little while trying to get out the first piece. It was very peanut buttery, but I liked it even though I don’t normally like peanut butter desserts. The chocolate and banana cut the richness of the peanut butter though so that was nice. It was very rich though so be sure to make this when you have enough people to eat it!
