Banana Cream Pie

I love banana pudding, so I was very intrigued by this pie and wasn’t quite sure what to expect.

It’s pretty easy to make starting with a simple vanilla wafer based crust. Once you’ve got that made, baked, and slightly cooled then you make the custard. I had never made custard until a few years ago and have discovered I’m a big fan. It’s just so delicious and while I still get a little nervous about accidentally cooking the eggs it’s actually pretty easy to make.

As noted in the recipe, you’ll let the custard cool a little and then take slices bananas and layer them on top of the crust. Then you pour the custard over it and chill. I did put some sugar in my whipped cream layer and then topped with more slices bananas. It’s not nearly as pretty as the picture on the recipe, but it still looked really nice.

Taste wise it was really good and I was surprised at how much I enjoyed it. You can tell the banana is there, but it’s not overpowering and the custard added a richness to the pie. All in all it was very good! While banana pudding is still my favorite, this was a great pie and I’d certainly make it again!
