Banoffee Cupcakes

I love Great British Bake Off and have heard them mention Banoffee Pie many times, but I’ve never actually tried it. While I’m not actually trying it now I did find this recipe for Banoffee Cupcakes and thought those would be fun to make.

This is a pretty simple recipe, though it has a few steps. First you make the cupcakes and since it’s very standard I won’t elaborate here. I will say that I didn’t have enough cupcake liners to do 14 cupcakes so mine were a little bigger and some ended up spreading out over the cupcake tin a little so just keep that in mind.

When the cupcakes were fully cooled I scooped some of the middle out and piped in the dulce de leche. I ate a little of the middle and was a little worried because it was super sweet. The whipped mascarpone cream frosting was easy to make as well and tasted really good. I topped the cupcakes with a little of the dulce de leche, which ended up looking silly since it didn’t pipe well and a dried banana.

These were surprisingly delicious. I was so worried they’d be too sweet because each of the components on their own are very rich, but all together they created a really nice unique flavor. Probably not something I’d want all of the time but a fun and different cupcake and makes me want to try the real thing sometime soon!
