Gruyere & Black Pepper Scones

I loved the Bacon Cheddar Chive Scones I made a few years ago and this felt like the more mature big brother to those, so I thought it would be fun to give these a try.

It’s pretty easy to make, though you do need to toast your walnuts beforehand. You throw all of the dry ingredients together, then mix in the walnuts, cheese, and chives (which I had to sadly omit as we did not have any on hand). I also didn’t have buttermilk so I had to make my own (1 tablespoon of lemon juice or vinegar to 1 cup of milk). Usually I feel like my scone dough is super dry, but this time I had the opposite problem. It recommends another tablespoon or two of flour if it’s too wet and the same of buttermilk if it’s too dry. Mine still was still a little wetter than normal when I dumped it on the sheet pan, but it wasn’t awful when I cut into it so I figured we’d just try it and see what happens.

I’m not a huge fan of gruyere but if you love it then your whole house will smell like gruyere so you’re in luck! I was a little worried about how these would taste based on the smell but they were actually really good. I think I like cheddar better, but it was very good and I liked the complexity the toasted walnuts, gruyere, and black pepper gave.
