
National Coffee Cake Day is this coming Sunday so I’m testing out this mini coffee cake. I love coffeecake, but most recipes end up making a ton. I like the idea of this recipe because it feels like just enough for 1-2 people.
This recipe was really simple and honestly doesn’t take much time. You’ll want to make sure your butter is softened and the egg is room temperature, but other than that you just mix the ingredients together as directed. I decided not to use the hand mixer just because I didn’t feel like dirtying it up, but I made sure to mix well, especially when creaming the butter/sugar. Once you’ve got the cake part prepped you’ll add the streusal mixture and then bake.
Mine was done right around 30 minutes and looked great. This was delicious and I love how it made just the right amount for two people. While I love coffee cake, it’s just too tempting to have around the house all weekend so this was great! Absolutely will make this again!
