Egg Bites with Bacon & Gruyère

I went back and forth on whether this was really a baked good, since that’s what I usually focus on here. But you do bake these egg bites with bacon and Gruyère so I felt like it would be okay. Plus it’s my blog so I guess I can make whatever rules I want. 😉

I really like the Bacon and Gruyère egg bites from Starbucks and have been wanting to try and make them at home for a while now. I searched for a couple of recipes and they all seemed about the same, so I went with this one.

It’s not very difficult, though be sure to use a bigger mixer as a small one won’t give you enough room. You basically just throw all of the ingredients (except the bacon) into the mixer and then let it mix until you’ve got a smooth mixture. I used all Gruyère for mine, but might experiment with a little Monterey Jack just to see how it tastes next time. Spray this into a well oiled cupcake tin and then sprinkle the cooked bacon on top. You’ll notice one of my egg bites doesn’t have bacon. Why, you ask? Well that’s because I somehow managed to knock over the bowl of bacon and lost more than half of my bacon on the floor so I had to do without on half of the batch.

I let mine cook for about 25 minutes just because I wanted to make sure they were done and that seemed about right. Taste wise, these were pretty good. They didn’t taste exactly like Starbucks and I think I might have put a little too much of the hot sauce in because there was a weird taste I couldn’t place and once I remembered it was in there I felt like that was it. Plus, the lack of bacon was also a major bummer and definitely contributed to the difference in taste. They sort of reminded me of the Red Pepper, Cheese, & Chive Tartlets I made a while back. I’d make these again, but would probably nix the hot sauce and try not to spill the bacon!
