Doughnut Muffins

I’m a big fan of doughnuts and muffins, so this recipe seemed like a fun mashup. It also reminded me of this donut cake I made a few years ago.

Side note: is it doughnut or donut?? I’ve already used both spellings here so I’m not sure what to do…..

Anyway, this is an easy recipe. So easy that I’m not even going to comment on the process because you can read. My muffins ended up baking for about 18 minutes and I let them sit as directed for a few minutes before moving on. I brushed the butter on some and dipped for others and found that dipping was just as easy so that’s how I did most of them. I then dipped them into the cinnamon sugar mixture, though it pressed on the top some and didn’t look as pretty. To cover it up I used a spoon to put some on top and that helped. I ran out of mixture and used some I had made before, but I think my increments were off because it seemed like there was too much cinnamon and not enough sugar. I didn’t include those in the picture, but they were very dark and didn’t look great (though they tasted fine!).

These are super easy and don’t take a lot of time, but they weren’t my favorite. Definitely easier (and less messy) than the donut cake I made though, but I think I’d still more of a coffeecake fun personally.
