
What’s better than a donut? Maybe a donut cake?? Thought this might be a fun way to end my summer cake series.
Bundt cakes are pretty easy; though I was a little worried about this one since I normally spray my bundt pans rather than butter/flour them. I can’t tell you the last time I buttered/floured a pan so it took me a little longer than it probably should have.
Once that was done I mixed together all of the dry ingredients, then the wet ingredients. I gently combined the two, along with the milk and try to stir until it was just mixed so I didn’t over mix the batter. Then I spooned the batter into the prepared bundt pan.
I ended up baking mine for 55 minutes and then let it cool at least 10 minutes before inverting it. As feared, part of the top did stick to the pan so it wasn’t as pretty as I’d hoped. Once cool, I finished the cake with the topping. I ended up making a mess trying to add the topping to the cake so there was cinnamon sugar all over the counter and the serving plate.
Taste wise, this was very good and reminded me of our favorite coffee cake recipe. Mine ended up being a little chewy (like a muffin) which wasn’t bad, but also wasn’t as tender as I expected. I’m not sure if I ended up over mixing despite being careful or what happened. It was very good though and fun; but I probably would either try cinnamon sugar donuts or a coffee cake if I wanted something like this in the future.
