
It’s National Biscuit Day! No matter what kind of biscuit you prefer, be sure to celebrate. Growing up in the South I have a preference for biscuits you can eat with breakfast (or a meal if you want!) so I’ll be celebrating with these Make & Freeze Biscuits from King Arthur. I actually made these biscuits earlier as a way to meal prep. The recipe isn’t too difficult; though I didn’t have the Bakewell Cream Baking Powder so I followed their instructions for what to do if you don’t have it. You mix all of the dry ingredients together and then work the cold butter in.
Note: you can freeze a stick of butter and then grate it to make things easier. This isn’t what I did because I didn’t even think about this until after I had mixed everything together.
Then you form the dough into a ball, roll it out on the counter, and then cut it into squares or use a round cutter for circles. In hindsight, I think I’d just cut it into squares next time because that’s easier and doesn’t waste dough.
Spoiler alert: in case you didn’t notice from the picture, clearly something went wrong with my biscuits. I’m not sure if I did something wrong with the Bakewell Cream Baking Powder substitution or if the ones I baked first were the second batch I rolled back into a ball and then cut. For that batch, I could feel the dough was a bit tough and remember thinking that I might regret this… I should have listened to my instincts.
Once you’ve got them all cut out you’ll wrap them well and put them in the freezer. I made about 6 the first time and those were the ones that felt tough and, as you can see by the picture, didn’t rise. They didn’t taste bad, but I ranked it lower since they’re supposed to be a lot fluffier and obviously that would taste better. Very disappointed with how mine turned out, but this was too easy to do so I would definitely make this again and probably buy the Bakewell Cream Baking Powder and cut it into squares next time.
