Chocolate Guinness Baked Donuts

I’m not a huge beer fan, but we had bought some Guinness for a recipe I never ended up trying so I’ve been trying to find ways to use it. I ran across this recipe on Instagram and it looked like fun. While I didn’t make this recipe vegan, it does have a vegan option in case you’re interested.

This recipe doesn’t take a lot of time, but in an effort to speed up the process I reduced the beer the night before it was needed. Then I was able to get up before work and make the donuts and glaze fairly easily. Just as a note, the reducing part will make your whole house smell like beer.

It’s an easy recipe to throw together and the only thing I changed was using Triple Zero Vanilla yogurt instead of plant-based yogurt since that’s what I had in the fridge. I was surprised these only baked for 8 minutes since I’ve made baked donuts in the past and felt like they usually bake a little longer. Nonetheless, I checked these at 8 minutes and they seemed done so I let them rest in the pan a few minutes before letting them cool on a wire rack.

While the donuts were cooling I went ahead and made the Guinness icing and ended up putting a little more powdered sugar in to make sure the icing wasn’t too runny. When the donuts were cool I gently dipped one side of the donut into the glaze. It wasn’t super pretty as you can see in the picture, but it worked. These donuts are very tender though so be careful not to break the donut while doing the icing.

These were so so good! The donuts were very tender and tasted like a delicious cake and I was surprised at how much I enjoyed the icing since I’m not a huge beer fan. I would absolutely make these again and am so glad I ran across this recipe!
