
I grew up eating Coca-Cola Cake so when I ran across this recipe for Cheerwine Chocolate Cake I thought it would be fun to try it and see what difference there was (if any) in taste. This is a super simple cake and perfect if you need to take a cake somewhere since you make it in a 9×13 pan. Sheet cakes aren’t always the prettiest cakes in my opinion, but they’re usually easy to take somewhere and taste good. This recipe is no exception.
You mix up the dry ingredients; then, mix the Cheerwine, butter, and cocoa in a saucepan and heat until boiling. Then combine the two and add the buttermilk, eggs, and vanilla. We didn’t have buttermilk on hand so I made my own (1/2 cup whole milk, 1 tbsp lemon juice and let sit for at least 5 minutes). From there you mix it up and then pour it into the 9×13 pan and let the oven do it’s magic.
The icing isn’t very difficult either. I melted the butter/chocolate mixture in the microwave, but be careful not to heat too much or the chocolate will seize. Once it’s melted you whisk in the powdered sugar, milk, and Cheerwine and voila – it’s done!
The cake tasted really good and definitely reminded me of a Coca-Cola cake but with a more cherry flavor (just as the recipe stated). I had tasted the icing separately and felt like it was super sweet; however, once it was on the cake it paired nicely and was very good.
