Chocolate Chip Bundt Cake

We recently celebrated several family birthdays and I wanted to try and make a Nothing Bundt Cake copycat. Almost all of the recipes used a box mix and I really wanted to try and do one from scratch so I ran found this recipe and decided to give it a try.

This is a pretty easy recipe to throw together and doesn’t take a ton of active baking time. The only real change I made was using sour cream, but I didn’t have enough so I used about 1/4 cup of Greek vanilla yogurt to get to the amount needed. I don’t know that I’d use that for the full amount but you totally couldn’t tell a difference in taste. I made sure to spray the pan really well since nothing is worse than missing chunks out of a bundt cake.

Rather than dusting with powdered sugar I opted to make a quick cream cheese frosting (1 16oz block cream cheese, 1/4 cup butter, 2 cups powdered sugar, 1 tsp vanilla, little milk). I got a little heavy handed with the milk so it wasn’t quite as thick as I’d hoped for but it tasted delicious! The cake itself was good but it was a little denser than I’d hoped but overall very good. The picture on the website looks better than mine so maybe I over mixed the batter? I’d definitely try this again to see if maybe there was something I did that affected the crumb. If I made it again I think it’d go with a dusting of powdered sugar on top and maybe some drizzled chocolate rather than the cream cheese, but it was still really good; just rich.
