
Bonus posting this week! I’ve started buying random ingredients occasionally while I’m at the store and then just finding recipes to use those ingredients. Spoiler alert: Thursday’s posting also includes a random ingredient I don’t normally purchase so stay tuned.
It’s been a fun experiment and that’s how I ended up buying espresso chips. Since I didn’t even know they sold espresso chips I thought the best thing to try first was the recipe on the back. I tasted one of the chips, not really sure what to expect and it tasted just like chocolate covered espresso beans, minus the actual coffee bean. I can already think of several ways I’d love to use these chips in the future!
The recipe itself is easy and pretty similar to most cookie recipes; the one exception is you melt the chocolate with the butter. The rest is just mixing things together so it’s a great recipe to make when you need a quick dessert. I baked my cookies for 9 minutes since it recommends taking these cookies out while the middle is still soft. Be sure to leave these on the cookie sheet for a few minutes before transferring to a cooling rack.
I tried one of these while they were still warm and it was like eating coffee flavored Chocolate Lava Muffins! Highly recommend eating them while warm if possible, but regardless of when you eat them they’re delicious!
