
First post following the 12 days of Christmas baking challenge and I felt like I needed to do a few healthyish recipes. Since it is officially flu season what better way to get back into a new year of baking with these Flu-Fighter Cookies?
This recipe is really easy and combines a lot of interesting ingredients so I wasn’t really sure what to expect. The molasses, lemon zest, and ginger seemed to be more dominant flavors so I was curious as to how they would mesh together. The recipe is pretty straight forward and the only thing I forgot to do was chill the cookies, but thankfully they mostly kept their shape while baking. They were a little fluffy rather than flat like an actual cookie.
The cookies are good, though it’s hard to figure out what these cookies want to be. Are they oatmeal, molasses, or something else? I do love both types of cookies and these marry the two well but I’m not sure I would just get a craving for these particular cookies.
